YIELD: 4 servings
TOTAL TIME: 30 minutes
2 cups roughly chopped tomatoes
1/2 cup chopped onions
1/2 cup chopped bell peppers
3 tbsp butter
1 tsp sugar
1 tsp chilli powder
3 tbsp ketchup
2 tbsp fresh cream
1/4 cup grated mozzarella cheese
1/4 cup parmesan cheese
2 tsp canned black olives
1 tbsp freshly chopped basil
1/2 tsp oregano
Salt to taste
Step 1: Combine the tomatoes and 1/2 cup of water and cook for about 10 minutes.
Let it cool completely and blend till you get a smooth mixture.
Step 2: Saute onions and chopped bell peppers in butter for 2 minutes.
Add the prepared tomato puree, sugar, chilli powder, ketchup and salt.
mix well and cook for around 2-3 minutes.
Step 3: Add the cooked pasta to the pan and add cream.
Mix well and cook for 2-3 minutes.
Step 4: Sprinkle some mozzarella cheese evenly over it and add some butter.
Step 5: Top it off with some oregano, parmesan, olives and basil!
Serve with garlic bread, if desired.
