These chicken lollipops are so crisp and juicy and make the perfect appetizer! Coated with a delicious szechuan sauce this appetizer is bound to make you lick your fingers clean!
YIELD: 2-3 servings TOTAL TIME: 45 mins
Chicken lollipop-300 gm(washed)
All purpose flour(Maida)-50 gm
Corn flour-25 gm
Black pepper powder(kali mirch)-1/2 tsp
Ginger garlic paste-1 tbsp
Red chilli powder(kashmiri)-1.5 tsp
Dark Soy sauce-3 tsp
Schezwan sauce-1 tbsp
Tomato sauce-1.5 tbsp
Finely chopped garlic-8 to 10 cloves Chopped spring onion/cilantro for garnish
Cooking oil-250 ml
Salt to taste
In a mixing bowl add the washed chicken lollipops and marinate them in the following: ginger garlic paste, red chilli powder 1/2 tsp, 1/2 tsp black pepper, 1 tsp soy sauce, salt to taste for about 30 mins.
Make sure the chicken is well coated with all the spices.
After 30 mins, make the batter for frying the chicken. To make the batter mix 50 gms all purpose flour with 25 gms corn flour and also add 1/2 tsp red chilli powder and salt. Now gradually add water and make it into a semi thick batter without any lumps. Next, heat oil in a pan and fry the marinated chicken lollipops dipped well in batter till crisp and golden brown (for about 2 mins on each side ) till the chicken is well cooked inside.
Place the fried chicken on a kitchen towel and prepare the sauce.
For the sauce heat 1 tbsp oil in a pan and sauté chopped garlic in it for about 1.5 mins.
Now add 2 tsp dark soy sauce. 1.5 tbsp tomato sauce, 1 tbsp schezwan sauce, some red chilli powder and some salt to taste. Add the fried chicken and toss well with the sauce. Garnish with fresh cilantro, some sliced onions and lemon.
Serve hot !
