Crispy Parmesan Chicken Cutlets:

YIELD: 8 servings

TOTAL TIME: 20-30 mins


  • 250 gms boneless chicken

  • 250 gms potatoes

  • 2-3 green chillies (finely chopped)

  • 2 medium sized onions (finely chopped)

  • 1 tbsp chopped coriander

  • 1 cup bread crumbs

  • 1 egg

  • 1 cup parmesan cheese

  • 1 tbsp ginger garlic paste

  • Freshly squeezed lemon juice-1

  • 1 tsp red chilli powder

  • 1/2 tsp turmeric powder

  • 1/2 cinnamon sticks

  • 1/2 tsp mixed ground spices (garam masala)


  1. In a pressure cooker add 1 cup of water and a pinch of salt.

  2. To this add ginger garlic paste, few cinnamon sticks and chicken.

  3. Cook till tender.

  4. In a separate pan boil the potatoes and mash them. Set aside

  5. Allow the chicken to cool and shred it into thin strips.

  6. To the mashed potatoes add green chillies, onions, lemon juice, coriander, ginger garlic paste and all the spices mentioned above. Mix well.

  7. Now add the shredded chicken followed by cheese.

  8. Divide the mixture into equal sized balls and shape each of them into a patty.

  9. Take each patty and dip it in beaten egg and coat it with bread crumbs. Dip the same patty in egg again and coat it with bread crumbs. Repeat the same for all.

  10. Heat oil in a deep pan over moderate flame and fry the cutlets until crisp and golden brown. Pair these delicious cutlets with some onion rings and serve them hot with ketchup, sauce or any dip of your choice!
