Shakshuka is a well known turkish dish consisting of poached eggs in a rich tomato sauce spiced with paprika! Usually served with crusty bread or pita and can be served at any time of the day breakfast/brunch/supper!
Its super healthy and easy to make with several variations out there but i'm going to go with the original recipe!

Coriander - 1/4th cup finely chopped
Olives (sliced)- as required
Olive Oil- as required
Pepper -1/2 tsp(optional)
Preparation
Heat a tablespoon or two of olive oil in a deep pan on medium heat.
Place the chopped onion in the pan and let it cook for 2-3 minutes. Add the garlic, paprika, and a sprinkle of salt. Let it cook a further 5 minutes, stirring regularly.
Add harissa sauce (made by blending 4 dried red chillis, 1 tsp cumin seeds, 1 tsp coriander seeds, 3-4 cloves of garlic, salt and extra virgin olive oil) or you can simply buy it ! i would recommend the Bechef original Tunisian Harissa paste which goes with everything from meat to vegetables, couscous, roasted potatoes, scrambled eggs, as a dip for bread … the list is truly endless. It can spice up any meal and is a must have for all those hot sauce lovers ;) CLICK HERE TO BUY
Add the tomatoes, stir once again and let it simmer for approximately 10 minutes, stirring regularly till the tomatoes are cooked.
With the back of a spoon make some indentations or wells in the chunky tomato sauce big enough to house each egg. Crack each egg into the wells you've created.
Let the shakshuka simmer for 7-10 minutes.
Before serving, sprinkle coriander over the top and season with a little salt and pepper.
Enjoy! :)
