Fish Fingers


YIELD: 2 servings

INGREDIENTS:

  • Basa fish fillets: 300 gms

  • Ginger garlic paste: 1tsp

  • Lime juice: 2 tbsp

  • Salt: 1/2 tsp

  • Turmeric powder: 1/2 tsp

  • Red chili flakes: 1/2 tsp

  • Crushed black pepper: 1/2 tsp

  • All purpose flour: 2 tbsp

  • Rice flour: 1 tsp

  • Corn flour: 2 tsp

  • Baking soda: 1/4th tsp

  • Eggs: 2

  • Panko (bread crumbs) : 1 cup

  • Oil as required

PREPARATION:

  1. Cut the washed fish into strips about 8 cm long.

  2. Add the fish fingers to a medium size mixing bowl. Add salt, lime juice, turmeric powder, red chili flakes, crushed black pepper, and ginger garlic paste.

  3. Mix everything well and keep aside for 10 minutes.

  4. In a separate bowl, add all-purpose flour, rice flour, corn flour, eggs, and baking soda. To this, add the marinated fish, mix well and set aside for another 10 mins.

  5. Heat oil for frying in a medium sized pan. Once the oil is hot, simmer the heat to medium. Coat each fish finger well with bread crumbs and fry in hot oil.

  6. Deep fry the fingers until golden brown and crisp. Fry in batches.

  7. Drain them on a kitchen towel.

  8. Serve hot with a dipping sauce.
