Gulab Jamun

A traditional Indian dessert made of milk powder dipped in rose flavoured syrup!

YIELD: 8 servings

TOTAL TIME: 20 mins

INGREDIENTS:

  • Milk Powder: 3/4th cup

  • All purpose flour: 1/2 cup

  • Baking powder: 1/2 tsp

  • Ghee/Oil: As required

  • Milk: For kneading

  • Ghee/clarified butter: 2 tbsp

For the Syrup:

  • Sugar: 2 cups

  • Water: 2 cups

  • Lemon Juice: 1 tsp

  • Rose Water: 1 tsp

  • Saffron: 1/4th tsp

  • Cardamom: 1-2 (optional)

PREPARATION:

  1. In a mixing bowl add all the dry ingredients (flour, baking powder, milk powder) and mix well.

  2. Add ghee to the prepared mix and then add milk for kneading.

  3. Knead into a smooth dough.

  4. Cover the dough with a lid and let it rest for 10 mins.

  5. Meanwhile prepare the sugar syrup by adding sugar, water, saffron and cardamom (I personally don't like the taste of cardamom so i tend to avoid it but its totally your choice)

  6. Mix well and let it come to a boil. Boil till it attains a sticky stage.

  7. Switch the flame off and add lemon juice (to prevent the syrup from crystallizing ) and rose water. Set the sugar syrup aside.

  8. Now make equal sized balls with the prepared dough making sure there are no cracks.

  9. Fry in hot oil till golden brown and crisp.

  10. Transfer into the prepared sugar syrup and let it double in size.

Enjoy as is or with vanilla icecream!
