INGREDIENTS (FOR PITA):
1 cup all purpose flour
1/2 cup whole wheat flour
2 1/2 teaspoon yeast
1/4 teaspoon baking powder
1/2 teaspoon salt
1 tablespoon sugar
1/4 cup warm water (might need more)
1/3 cup warm milk
2 tablespoon oil
INGREDIENTS (FOR CHICKEN):
1/4 cup extra-virgin olive oil
Juice of 1/2 a lemon
Garlic: 1-2 cloves (minced)
Salt: 1 tsp
Ground cumin: 1/2 tsp
ground coriander: 1/2 tsp
freshly ground black pepper: 1/4th tsp
ground turmeric: 1/4th tsp
ground cinnamon: 1/8th tsp
Red chilli powder: 1/4th tsp
boneless skinless chicken thighs: 150 gms
Onion: 1 large ( thinly sliced )
Chopped tomatoes, lettuce, cucumber, pickles and olives
In a large bowl, whisk together oil, lemon juice, garlic, and spices. Add chicken and toss to coat. Cover and refrigerate for at least 2 hours.
Add onions to the prepared chicken marinade.
Preheat oven to 425° and grease a large baking sheet with cooking spray. Add the chicken marinade and bake for 30 mins till the chicken is golden and cooked through. Cut the chicken into thin slices and set aside.
For the pita, in a bowl, add the water, milk, sugar, yeast, and mix well. Cover and set aside for 10 minutes.
In a different bowl, add all your dry ingredients( flour, salt, and baking powder) whisk well to combine.
Add the yeast mixture and oil to the flour and knead until you get smooth, soft dough.
Cover the dough with plastic wrap or wet cloth and let it double in size in a warm place. Make four balls out of the dough.
Dust the working surface with flour. Roll out each ball with a rolling pin into 5 – 6 inch circle.
Place your non stick flat pan on the stove, on medium heat. Place the rolled ball on the pan and flip the bread in about 10 seconds.
Gently press around the pita bread’s edges, using a spatula to help the bread to puff up.
When the bread is completely puffed up and has some brown patches, your pita bread is ready. Spread some mayonnaise on your pita bread and add the prepared chicken marinade. Add some chopped tomatoes, cucumber, lettuce, bell peppers and some pickles or olives if you like!
Serve immediately. Enjoy! :)
