Kadai Paneer


YIELD: 5 servings

TOTAL TIME: 30-40 mins


INGREDIENTS:

  • Cottage cheese/Paneer: 200 gms

  • Tomato: 1 medium

  • Onions: 3 medium (1 cut into cubes; 2 chopped)

  • Cashews : 6-8

  • Green chillis- 2

  • Cloves of garlic: 7-8

  • Ginger: 1 inch

  • Bell peppers- 1 (cut into cubes)

  • Oil: 3 tbsp

  • Turmeric powder:1/3rd tsp

  • Red chilli powder: 1/2 tsp

  • Cumin powder: 1/3rd tsp

  • Dried red chillies: 3

  • Coriander seeds: 1.5 tbsp

  • Cardamom: 1

  • Dried Fenugreek Leaves

  • Butter

  • Salt to taste

  • Coriander leaves for garnish

PREPARATION

  1. In a pan on low heat add coriander seeds and dried red chillis and roast for 2 mins.

  2. Set it aside and let it cool.

  3. In a separate pan, add 1 tbsp oil and add your crushed cardamom and saute for 1 min. Then fry the chopped onions, green chillis, cashews, chopped tomato, garlic and ginger for about 2- 3 mins on medium flame.

  4. Switch off the flame and let it cool completely.

  5. Add your roasted coriander seeds and dried red chillis in a blender and grind it into a fine powder. Set it aside.

  6. Add your cooled fried ingredients in the same blender and blend it into a smooth paste.

  7. In a pan heat 2 tbsp oil , fry the paneer for 2 mins and set it aside.

  8. In the same pan add your cubed bell peppers and onions. Saute til the onions turn transparent and set them aside.

  9. Now add some oil and add turmeric powder, red chilli powder, cumin powder. Mix well and add the blended paste to it. Cover the pan with a lid and cook for 2 mins on low flame.

  10. Add 2 tsp of your roasted spice powder followed by 1/2 tsp of mixed ground spices (garam masala). Mix well and cook on low flame for about 2-3 mins.

  11. To this add 1 cup of water and some salt and let it boil.

  12. When it starts to boil, add the fried paneer, cubed bell pepper and cubed onions.

  13. Cook for 3-4 mins on low flame.

  14. Now add butter and dried fenugreek leaves and switch off the flame.

  15. Garnish with some coriander.

Serve hot with naan or fried rice!
