Key Lime Pie

  • Sweetened Condensed milk : 200g (CLICK HERE TO BUY)

  • Cookies or Graham crackers : 100g / 15 cookies

  • Melted butter- 6 tbsp

  • Lime juice: 50 ml (1/2 cup)

  • Fresh Cream: 150ml (1 cup)

  • Green food colour: few drops (optional)


For the crust:

  1. Crush the cookies finely using a roller pin. Combine the cookie crumbs and melted butter in a mixing bowl. Stir with a fork first, and then your hands until the mixture is well combined.

  2. If you're using graham crackers make sure you add sugar.

  3. Press the crumbs firmly onto the bottom and up the sides of a 9-in deep-dish pie pan. The crust should be about 1/4-in thick.

  4. Bake the crust for 10 minutes, or until lightly browned. Then let the crust cool a bit while you make the filling.

  5. You can also skip baking and instead press the crumbs onto a greased shallow glass pie dish and chill for 15 mins in the refrigerator.

For the filling:

  1. Whisk the condensed milk and lime juice together until thick.

  2. Whip the cream till soft peaks form and fold into the condensed milk mixture.

Mix gently till combined.Pour onto the cooled crackers layer.

Bake for about 15 minutes, or until the filling is almost set.

Or you can simply avoid this step and freeze for 1-2 hrs or until set.

Swirl the green colour through the mixture before freezing to decorate your key lime pie.
