Mini Sub Sandwiches

TOTAL TIME: 2 hrs

INGREDIENTS (FOR THE BREAD):

  • 1 1/4 c. milk, lukewarm

  • 1 tbsp. plus 1 tsp granulated sugar, divided

  • 1 (0.25-oz.) packet active dry yeast

  • 5 c. all-purpose flour

  • 2 tsp. salt

  • 1/4 cup water

  • 3 tbsp. butter, softened

  • Egg wash, for brushing

PREPARATION:

  1. In a glass measuring cup, combine lukewarm milk and 1 tsp sugar. Now add yeast and let it sit till foamy.

  2. In a mixing bowl combine all the dry ingredients ( flour, 1 tbsp sugar and salt)

  3. Mix well and add the yeast mixture.

  4. Add water (as needed) and knead into a smooth dough adding butter 1 tbsp at a time.

  5. Knead for at least 5 mins till soft.

  6. Transfer the dough to a greased bowl and cover with a cling wrap.

  7. Set aside in a warm place till it rises (for about 1 hr)

  8. After it rises deflate the dough by kneading again. Divide it into equal sized portions and line a baking sheet with parchment paper.

  9. Roll and stretch each piece of dough into a 4 ½” long cylinder, about 2” wide. Place on prepared baking sheet about ½” apart from each other. 

  10. Set aside to rise for another 45 mins.

  11. Apply egg wash and add herbs of your choice .

  12. Bake for 20 mins at 400 F.


INGREDIENTS (FOR THE FILLING)

  • Mayonnaise

  • Mustard sauce

  • Tomato sauce

  • Sliced capsicum

  • Jalapenos

  • Sliced tomatoes

  • Sliced cucumbers

  • Iceberg lettuce

  • Fried chicken cooked in spices

PREPARATION:

  1. Place each bread on a dry surface and slit horizontally using a sharp knife.

  2. Spread lettuce over the lower bread and add all the sliced veggies mentioned above along with salt and pepper.

  3. Cut the fried chicken into small pieces and place them evenly.

  4. Now add mayo, ketchup and mustard sauce.

  5. Sandwich it with the upper side of the bread and press lightly.

  6. Enjoy! :)
