No-Bake Mini Cheesecakes


1.OREO CHEESECAKE:

YIELD: Makes 12

TOTAL TIME: 20-30 mins

INGREDIENTS:

For the crumb base:

  • 150g Oreo OR Chocolate Cookie Crumbs

  • 70g Unsalted melted butter

For the filling:

  • 250g Cream Cheese

  • 1/2 Cup Caster Sugar OR Icing Sugar

  • 300ml Whipped Cream

  • 2 Teaspoons Vanilla extract

  • 3/4 Cup Oreo OR Chocolate Cookie Crumbs

PREPARATION:

  1. In a bowl add your crushed oreo and add melted butter. Mix well.

  2. In a silicone tray place your crumb mixture and press it down. Freeze for 15 mins.

  3. In a mixing bowl add cream cheese, sugar, whipped cream and vanilla extract and whisk till stiff peaks form.

  4. Now add in your cookie crumbs and mix well.

  5. Por it onto the crumb base and freeze overnight.

  6. Top it with some whipped cream and crushed cookies.

  7. Enjoy! :)

2.LEMON CURD CHEESECAKE:

YIELD: makes 10

TOTAL TIME: 20-30 mins

INGREDIENTS:

For the crumb base:

  • 150 g digestive biscuits

  • 60 g melted unsalted butter

For the filling:

  • 325 g cream cheese

  • 60 g icing sugar

  • 75 g lemon curd

  • 1 lemon zest

  • 1.5 tsp lemon juice

  • 150 ml cream

PREPARATION:


  1. In a bowl add your crushed crackers and melted butter. Mix well.

  2. In a silicone tray place your crumb mixture and press it down. Freeze for 15 mins.

  3. In a mixer with a whisk attachment add cream cheese, sugar, lemon curd, lemon zest , lemon juice and whisk until smooth.

  4. Now add in your cream and whisk until very thick.

  5. Pour it onto the crumb base and freeze overnight.

3.STRAWBERRY CHEESECAKE:

YIELD: makes 12

TOTAL TIME: 20-30 mins

INGREDIENTS:

For the crumb base:

  • 3 cups plain biscuits (graham crackers or digestive biscuits)

  • 3/4 cup butter, melted

For the filling:

  • 3 cups strawberries, hulled

  • 1/3 Cup sugar

  • 1 ½ cup whipping cream

  • 3 cups cream cheese

Extra strawberries or edible flowers for decoration

PREPARATION:

  1. In a bowl add your crushed crackers and melted butter. Mix well.

  2. In a silicone tray place your crumb mixture and press it down. Freeze for 15 mins.

  3. Puree the strawberries and sugar in a food processor or blender.

  4. Add in the cream cheese and blend until smooth.

  5. Pour in the cream and continue blending until your mix has thickened up well.

  6. Pour batter over the prepared crust, cover with plastic wrap and refrigerate overnight.
