Basmati rice : 1 1/2 cup
Yellow, green and red bell peppers: roughly chopped
Kidney beans (boiled) : 1/2 cup
Corn (boiled): a handful
Frozen peas: 1/2 cup
Garlic: 1 tbsp (finely chopped)
Onions: 2 medium sized (chopped)
Tomato puree : 1/2 to 1 cup
Tomato sauce: 1 tbsp
Oil: 2 tbsp
Butter 1 tbsp
Salt as required
Cumin powder: 1/2 tsp
Red chilli powder 1/2 tsp
Dried herbs: 1 tsp
Red chilli flakes: 1 tsp
Water to cook rice: 2.5 cups
Fresh coriander to garnish
Soak the basmati rice in water for about 20 mins
In a wok add oil and butter and saute finely chopped garlic for 2 mins on low to medium heat.
Add the chopped onions and saute till soft.
Now add the soaked basmati rice after straining and coat it well with the garlic and onions.
5.Now add the chopped bell peppers and frozen peas.
6.Saute for 2 - 3 mins.
7.Add tomato puree and mix well.
8.Now add the spices mentioned above ( cumin powder, red chilli powder, black pepper, salt , dried herbs, chilli flakes)
9.Mix well and add some tomato sauce.
10.Now add 2.5 cups of water and cook the rice.
11.When the water starts to boil add some corn, boiled kidney beans and jalapenos.
