The Best Butter Chicken Recipe!


YIELD: 4-5 servings

TOTAL TIME: 30 mins


INGREDIENTS:

  • Boneless chicken cubes: 500 gms

  • Tomatoes: 150 gms (chopped)

  • Onions: 1 large sized (chopped)

  • Green chillies: 2 (finely chopped)

  • Cumin seeds: 1/2 tsp

  • Ginger garlic paste: 2 tsp

  • Mixed ground spices (garam masala) : 1 tsp

  • Cashews: 8 (soaked in warm water)

  • Fresh Cream: (1/2 cup)

  • Butter: 100 gms

  • Tomato ketchup: 1 tbsp

  • Sugar: 1/2 tsp

  • Red chilli powder: 1- 1.5 tsp

  • Coriander powder: 1 tbsp

  • Dried fenugreek leaves: 1 tsp

  • Coriander leaves (chopped): 1 spring

  • Oil: 4 tbsp

  • Salt to taste

  • Red food colour (optional)

PREPARATION

  1. Marinate the chicken cubes in 1 teaspoon ginger garlic paste, salt, 1/2 teaspoon chilli powder and a pinch of coriander powder.

  2. Now shallow fry in hot oil then transfer onto a plate and keep it aside.

  3. In this oil add cumin seeds,onions, ginger garlic paste and mix well.

  4. Now add some water, coriander powder, cashew nuts, red chilli powder, crushed dried fenugreek leaves, green chillies, tomatoes. Mix well, cover with a lid and cook. (NOTE: You can reduce the number of green chillies or the amount of red chilli powder based on how spicy you like it)

  5. Now add the mixture to a blender and blend into a smooth puree

  6. In the same pan add butter, prepared puree, salt, food colour mixed in water (optional), sugar and let it boil.

  7. Now add tomato ketchup, fresh cream, fried chicken, and mixed ground spices. Mix well and cook for 3 -5 mins. Garnish with some chopped coriander.

  8. Switch off the flame . Serve hot with naan or rice.
