The best-ever grilled cheese sandwich~

YIELD: 4 servings
TOTAL TIME: 20 mins
INGREDIENTS:
8 slices of bread
2 tbsp butter
1/2 cup grated carrot

1/2 cup grated cabbage
1/2 cup chopped spring onions (whites)
1/2 cup chopped spring onions (greens)
1 tbsp chopped green chillies
1/2 tsp red chilli sauce
1 tbsp ketchup
1/2 cup mayonnaise
1/4 cup ranch
11/2 tbsp home made red chilli paste (made by blending dry red chilis soaked in water)
1/2 cup grated mozzarella cheese
1/2 cup grated processed cheese
Salt to taste
PREPARATION:
Heat 1 tbsp of butter in a pan and add the green chilis and spring onions (whites) and saute for 1 min
Now add the chopped carrot, spring onions (greens) and cabbage. Saute for 2 mins on medium heat then add some salt.

Now add your prepared red chilli paste and red chilli sauce. Mix well.
Then add ketchup.
Grate cheese on top. Allow it to melt and switch off the flame.
Divide the filling into 4 equal portions and keep aside.
Place the bread slices on a flat dry surface and butter them lightly.
Place the prepared filling on each bread slice.
Spread mayonnaise and ranch on the part of the bread slice facing the filling.
Brush some butter onto the grill and grill your sandwiches for about 5 to 7 mins till they are crisp.
Keep checking in between.


Serve the sandwiches with ketchup and chips or fries :)
