The BEST grilled chicken marinade recipe with pickled onions and homemade mint sauce ~

YIELD: 4 servings

TOTAL TIME: 60 mins


For the marinade:

  • 4 chicken thighs

  • 1 tsp ginger garlic paste

  • 1/4th tsp turmeric powder

  • 1 tsp chili powder

  • 1/4th tsp mixed ground spices (Garam masala)

  • 2 tsp lemon juice

  • 2 tsp hung curd

  • Salt to taste

  • Food colourant (optional)

For the mint sauce:

  • 2 tbsp coriander

  • 2 tbsp mint

  • 1/4th tsp sugar

  • 1 tbsp hung curd

  • 1 tsp lemon juice

  • 1 green chilli (large)

  • 2 cloves of garlic (medium sized)

  • Salt to taste


  • In a medium sized bowl, add your chicken thighs. You can even use chicken breast.

  • Add ginger garlic paste, turmeric powder, chilli powder, garam masala , lemon juice , hung curd and salt. Coat the chicken well and leave it overnight for marination in the refrigerator.

  • Reserve about 1/4th cup of marinade.

  • For the sauce: In a blender add coriander, mint, sugar salt, lemon juice, garlic and green chilli.

  • Blend using a little water.

  • Now mix the prepared paste with hung curd and your mint sauce is ready.

  • Preheat grill to medium high.

  • Add chicken and grill, basting with reserved marinade, until cooked through.

  • Serve with some pickled onions and mint sauce or mayo.
